The best recipe ever is a tin of tomato bolonaise (value range) from the supermarket and some dried spaghetti with some cheddar or some frozen oven chips. Then add some ketchup. Italy on a plate. That’ll show them Italians how to cook!

Marco Polo came from Venice. In Venice and the rest of Northern Itally pasta arrived much later. Pasta comes from Southern Italy. It was brought to Sicily by the Arabs. For the rest I agree with you. It's amazing how culture contamination enriches cuisine!

@Giacomo Summaria first u quoted a result of 71 gold and 92 silver medals vs 62 gold and bla bla bla as hard facts. Well that 71 gold and 92 silver medals were the total number of medals ITALY won. The 62 Gold medals and silver were the medals CHAMPAGNE won. Champagne is ONE REGION in France and the only region allowed to produce "champagne". So that HARD FACTS that you speak of already clearly shows the brand of Champagne and that it is a benchmark such that your entire country results is compared to that one region alone 😂.

Add cooking water to the sauce if you want pasta soup. This bullcrap about using starchy pasta water to make the sauce thick or smooth just needs to stop! If you want smooth or thick sauce add some tomato sauce or cream and just let it be. You're just watering down the sauce if you add pasta water. Trust me... it's all lies. My Italian Grandfather wouldn't even do that, and his mama and papa wouldn't even do that. Let me tell you what pasta water will do to a sauce. It will thin out a creamy sauce that has gotten too thick, or if you've reduced a tomato sauce too thick. The starch in the water isn't nearly enough starch to thicken like flour or cornstarch will. If you want your sauce thick or smooth add cornstarch.

@Cosimo Fabbri Cornstarch is a perfectly normal ingredient to thicken sauces (quickly). Many stews demand cornstarch for example. Of course it depends alot on the type of sauce we are speaking of. If it is oil based I would not use cornstarch, but a meaty sauce, sure.

You can add cornstarch on your frying batter, or in a cake, if you put cornstarch on your pasta sauce you can't cook.

@matt mallecoccio we normally do not use water for pesto sauce, because pesto is something that need to me mix in the pasta when its already on the plate, since you should serv it medium temperature and not completely warm, the warmth is gonna defect the taste!

@TomboyVale Good to hear facts from an Italian. I'm only partially Italian, but my Nonno was the full blooded son of Italian immigrants and they were never even taught to put any pasta water in, but I think that might be because nobody waited around for the pasta to get claggy. They also didn't drown the pasta in sauce. That is usually something that us Italian American kids and grandkids would do on our plates. I'm a bit appalled at some of the replies I've been getting either are berating me for criticizing chefs. It's good to know that some people can respectfully correct me and the blunders that US and UK chefs make. Apparently, I was partially right and partially wrong. And does it matter what kind of sauce needs a little dab of pasta water? Are there some sauces that absolutely work without it?
